Ingredients

8 plum tomatoes

4 red peppers

2 shallots sliced

4 cloves of garlic, crushed

4 sprigs of basil

1 egg yolk

50ml of olive oil

Pinch of salt

Pinch of pepper

Sherry vinegar to taste

Method

  1. Slice the tomatoes, peppers and shallots. Add the garlic and mix together well with the salt.
  2. Add the basil and leave to marinade for 2 hours.
  3. Blend together with the egg yolk and slowly drizzle in the olive oil.
  4. Pass through a sieve over ice and serve with Sherry vinegar
