Christmas Pudding that is super simple and can be made in minutes! What’s more, it’s allergen-friendly and vegan for the whole family to enjoy!
Add mixed fruit, apple, lemon zest and juice and spirit to a bowl. Mix well and microwave for 4 mins in a covered microwavable bowl.
Cream the spread, sugar and golden syrup together. Then add the milk, flour and spices to your mix and combine until you have a smooth batter.
Add the warm fruit mix and stir until the fruit is evenly distributed through the batter.
Grease your bowl and place a baking paper disc in the centre then spoon in the batter. Cover loosely with a piece of greaseproof paper on top.
To use all the mix in one bowl, microwave on high for 3 ½ minutes or split into two individual mugs and microwave each for 2 ½ minutes.
When cooked, turn out onto a plate and warm your spirit gently in a saucepan then light with a Cook’s Match before pouring over your pudding to serve.
